Burkina My friends gave me their recipe for green tea (see my previous post about it). I have made my first tea, they found very good but I personally found it more difficult to digest :-) So they awarded me the title of "fakir" (tea maker) .
The necessary equipment.
Tea bags found in Ouagadougou from Hong Kong (still a chinoiserie!).
Quantities:
30g green tea, possibly mint or ginger
much sugar
lot of water
1) Put tea leaves into the teapot and cover completely with water . Possibly add mint or ginger. Boil over low heat. The longer the tea boils, the better the tea. Personally, I let boil 5 to 10 minutes.
2) Cool the liquid successively pouring from the teapot into a tall glass or cup, and vice versa, this many times (at least 3 or 4: Personally, I do it about 10 times). If we do it very high, the tea cools faster (see pictures below).
3) Repeat steps 1) and 2) and repeat 1) a third time.
4) Collect the water in the tall glass, add sugar to taste one second teapot, and convey water from the second glass teapot.
5) Put the same amount of water in the first teapot (which contains the tea leaves), and put to boil in preparation for the second round. A third may possibly be considered, but tea will not be very strong.
6) Create the foam by pouring the mixture successively water / sugar in the second large glass teapot, then conversely, a large number of times and very quickly.
7) Pour the mousse into the glasses of tea, the tea warm a few minutes (you can optionally add mint or ginger this time), then add the tea mousse into the glasses. Good tasting
